What's the difference between macaroons and macarons?

These cookies’ ingredient list is quite similar but wow are they different? A macaron is a French cookie that’s made of finely ground-blanched (peeled) almonds suspended in a meringue. Once baked you take two cookies and sandwich them together with a layer of buttercream and jam. A macaroon is a cookie that’s typically made of shredded coconut stirred into whipped egg whites and sugar - an iteration of meringue that's not as light as a macaron. Once out of the oven and cooled you can also dip this cookie into a chocolate of your choice.

    Are they gluten friendly?

Yes! The ingredients in a macaron (and also a macaroon) just happen to have no gluten!
